This recipe serves 4 adults (we cut the last one in half for the dragonborn). This is what you will need
2 Acorn Squashes
1 peach in slices (we used canned peaches that were canned in water with no added sugar)
1 med zucchini
1/4 onion chopped
3 cloves garlic minced
2 chicken breasts cubed
1 tbsp cried rosemary crushed
2 tbsp olive oil
When the peaches start to get soft (or if you used canned peaches, heated through) take it off the heat.
Preheat your oven to 350. Brush the insides of your squashes with the olive oil, then stuff your squashes and bake uncovered for 35 minutes on the center rack.
(If your peaches and chicken start to crisp and burn, move the rack down one space to heat the rest through). This is what ours came out like!
Doesn't that look yummy? Had just the right amount of sweetness for me. Although DH said he might try adding some honey to it next time we make it.
Sadly, I didn't take a picture of the salad we had. But it super easy. Its just spring mix bagged lettuce topped with a handful of sliced strawberry and a handful of blueberries. Then drizzle it with some raspberry vinaigrette (DH used honey mustard). Today was a sweet kinda day. I think it was because it was so nice out and i subconsciously wanted something springtime-y.
Its supposed to be yucky out tomorrow (thank you Washington), I wonder what yummy thing will we have for dinner tomorrow? Hmm, soup kinda sounds good and so do sandwiches (but i don't have time to make any bread).
