Failed Tabbouleh, Successful Quinoa Salad

So I was craving some tabbouleh today and unfortunately PCC is all the way in Issaquah. I really didn't want to pack up the dragonborn and drive for a half hour just to get some delicious tabbouleh, SO I decided to make my own.

Well come to find out I don't have any fresh parsley, oh well it should be good without it, right? I still had the tomatoes and instead or Bulgar wheat i used quinoa. I mean who doesn't love quinoa.  I threw in some yellow, red and orange sweet pepper cause they needed to get used, and also some zucchini i had laying around the house. Sprinkle on some S&P, some lemon juice, and some cajun season. We like cajun season at our house. It goes good on EVERYTHING! And you get this deliciousness
So instead of tabbouleh I made delicious quinoa salad. not quite what i wanted but good enough for me. =]

here is an ingredients list if you want to try it. Its really simple. Now mind you, I had some left over quinoa from a previous dinner so this only took me five minutes to make. 

1 cup quinoa
1.5 cup water

1 mini sweet pepper in red, yellow and orange. (you can use and color you like i just had these handy)
Half of a medium sized zucchini sliced 
6 grape tomatoes (you can use 1 - 2 regular tomatoes instead)
Salt
Black Pepper
Cajun Seasoning
Lemon Juice (i used bottled but you can used fresh also)

Bring 1.5 cups of water to a boil and add your quinoa. Cover and bring down to med high heat and let all of the water evaporate then fluff quinoa with a fork. I tend to rinse my quinoa after but you don't have to. Put in a bowl and set aside.
Roughly chop your peppers tomatoes and zucchini. Add chopped veggies to quinoa and toss. season to taste. 
there ya go. pretty simple right! =]

I might add some chicken to it and make a yummy snack to take to work with me. 

Now i must check my chicken stock. Don't worry that's another post to come!
